Bean salads are freaking fantastic! Not only are they insanely cheap, they take minutes to put together, are super duper healthy and require no cooking which makes it the perfect ingredient for hot summers.
My issue is that most bean salads are boring. They are over-dressed which negates the healthy aspect. And most of the time they are just mushy and I hate food with no texture. Traditional bean salad with corn and peppers doesn’t do it for me – I’m just left wishing I was eating chili.
That’s why I love adding herbs and fresh vegetables for some crunch. Variety is the spice of life after all.
